The lime tree is a medium sized shrub, fairly vigorous and fruit bearing. It growsnumerous thin, ramified and thorny branches with dense, light green foliage. The flowers are borne on the axils of the leaves, singly or in clusters. They form pinkish buds and then turn white on opening. Subsequently they will produce round or oval fruits that are small, with thin, adherent skins, from dark green tending toward yellow at maturity. The juicy pulp is very acidic and has a distinctive greenish color. There are two main species of lime trees: - Those with small fruits and very acidic flesh, known as limes...Mexican, West Indian or Key lime. Their cultivation extends mainly to Mexico, Brazil,the West Indies, India and Malaysia. - Those with larger fruits and less acidic flesh, known as Persian lime, Tahitian lime or Bearss lime. They are mainly grown in Florida, Brazil and Mexico. Lime trees are small and thorny with small, elliptic and light green-coloured leaves. Floral buds are sometimes slightly tinged with crimson. Branches carry thorns at the leave's axilla. Fruits are small, round or oval, with a very thin and adherent skin, from dark-green to yellow when ripe. The juicy, very acid pulp, is notable by its greenish colour. Lime from Tahiti is larger, juicier, without pips and slightly less acidic fruit.
History:In 1493, Columbus took seeds of lime to the West Indies and fruits were taken on sailing ships to prevent scurvy, and this is the origin of the name "limeys" for British sailors. In French, lime is also called "limette" (small lime) or "citron vert" (green lemon).
