Sage is a small shrub 30 to 50 cm high, with a ligneous, brownish and fibrous root. The stem is erect and the leaves are opposing, petiolate, oval, rough, whitish and evergreen in winter because the surface is protected by woolly hairs. The large blue-pink flowers are visible from May to August. They are grouped together at the base of the upper leaves. The whole forms great spikes. The ripe fruit (tetrachene) yields 4 black seeds. All parts of the plant have a strong smell and a warm and bitter taste.
History:Garden sage was called "sacred herb" by Romans because of its exceptional medicinal properties. The word "salvia" means "to save, to heal". According to a popular old saying "whoever has sage in his garden does not need a doctor". It was considered a marvellous plant by most people in Antiquity; they often added it to mead and barley beer, in order to obtain its prophetic benefits and to strengthen the incantations. This herb of all vitues has been known from the dawn of time. The ancient Greeks and Romans first used sage as a meat preservative (Chipault will highlight in 1952 its antioxidant properties like rosemary and other spice herbs). It is said that Louis XIV took a daily infusion, and despite this, he reigned for more than seventy years! This herb was called "toute bonne" meaning "well for all". 2000 years ago, Celts already knew of the magical effect of sage; they used it to prepare tisanes and infusions that they drank during religious ceremonies to induce trances. It has been said that these trances looked like a collective fit of epilepsy; it is explained, nowadays, by the properties of thujones.
